Egg Plant Curry/ Bangan Bhartha


INGREDIENTS

2 big Egg plants/Bangan
2 Onion
4 Spring onions
1 Tomato
Garlic
Ginger
Mustard seeds
Oil
Salt
1 spoon Red chilly powder
1 ts Turmeric powder
1 spoon Dry coriander powder
1 spoon green coriander

RECIPE

Brush baigan (eggplant) with oil and roast it on a gas burner over medium heat or in oven.Frequently turn the eggplant upside down, until fully roasted. Take off it's skin and mash the flesh.

Take 2 table spoon oil in pan and keep it on fire. Add 1 tea spoon mustard seeds and onions. Let it be brown and add tomatoes. Add all left spices mentioned in ingredients and in last chopped eggplant.

cover it and stir for 10 to 15 minute. Decorate with tomatoes, onion and corriend garnish. Your curry is ready to serve.
